Project Overview
This central kitchen cold storage project was designed for Haidilao, an internationally renowned hot pot brand, as part of its core supply chain infrastructure development across China. Focused on Haidilao’s commitment to “end-to-end cold chain logistics and food safety,” the project established standardized, high-performance cold storage facilities for central kitchens nationwide. These facilities ensure efficient daily operations for Haidilao restaurants while maintaining the quality and safety of globally sourced ingredients.
Cold Storage Design & Temperature Zones
To meet the diverse storage requirements of hotpot ingredients, the cold storage was divided into different temperature zones with precise control:
1. Chilled Storage (0℃ ~ +5℃)
- Purpose: Preserve freshness and nutritional value of highly perishable food items.
- Products: Pre-cut and cleaned vegetables, fruits, tofu products, dairy items, and other short-shelf-life ingredients ready for distribution.
2. Frozen Storage (-18℃ ~ -23℃)
- Purpose: Long-term storage under international standard freezing conditions. Effectively inhibits microbial growth, locks in natural flavor and moisture, and maintains stable product quality.
- Products: Hotpot soup bases, seasoning powders, beef & lamb rolls, meatballs, seafood (shrimp, fish fillets), tripe, duck blood, animal organs, and other frozen hotpot ingredients.

- Seasonings & Soup Bases: Solid and liquid hotpot bases, spice blends, sauces.
- Fresh Produce: Cleaned and pre-cut vegetables, mushrooms, and root vegetables.
- Seafood: Shrimp, fish, shellfish, shrimp paste, fish paste, etc.
- Meat Products: Beef & lamb rolls, sliced meats, meatballs, fried pork, and more.
