Long-Term Preservation – Frozen Strawberry Cold Storage
Cold storage is considered the most reliable method for extending strawberry shelf life. There are two primary techniques: low-temperature refrigeration and quick freezing.
- Refrigerated Storage: Reduces microbial activity, slows down respiration, and delays ripening, which helps extend the shelf life.
- Quick Freezing: Rapid cooling prevents the formation of large ice crystals inside the fruit, minimizing cell damage and preserving the original flavor, color, and texture of strawberries.
Step-by-Step Freezing and Storage Process
- Selection & Preparation: Choose strawberries with about 80% maturity, free of visible damage. Remove stems and leaves, rinse gently in water, and allow them to air dry.
- Quick Freezing: Place the strawberries in a blast freezer at -25°C until the fruit core reaches -15°C. This ensures rapid freezing and prevents cell breakdown.
- Packaging & Cold Storage: After freezing, pack the strawberries and store them in a cold room at around -18°C. In this environment, strawberries can be preserved for 12–18 months while maintaining excellent quality and taste.
- Defrosting: When removed from storage, thaw the frozen strawberries slowly at 5–10°C for 80–90 minutes to restore optimal texture and flavor.

If strawberries are not quick-frozen, they can still be stored in a chilled preservation cold room at around -1°C. Under these conditions, strawberries can last up to 30 days without significant quality loss.
⚠️ Note: The storage temperature should not fall below -3°C, otherwise chilling injury may occur within just 3–4 days.
