Fresh broad beans – also known as fava beans or “hu dou” – are a popular spring vegetable. They are nutritious, sweet, and have a unique creamy texture. But like many fresh legumes, they don’t last long at room temperature. After about 7 to 10 days, broad beans start to change colour, lose flavour, and eventually rot.

If you grow broad beans or buy them in bulk, proper broad bean cold storage is the solution. A well‑managed cold room can keep them fresh for 1 to 2 months – and even allows you to store them during the peak season and sell later at a better price.

Why Do Broad Beans Spoil So Fast?

Fresh broad beans are alive after harvest. They still breathe, lose water, and produce heat. At room temperature, their respiration rate is high, which quickly burns through their natural sugars and starches. That’s why they turn brown, shrivel, and grow mould within a week or so.

Cold storage slows down this process dramatically by:

  • Lowering respiration rate
  • Reducing moisture loss
  • Inhibiting mould and bacterial growth

Step‑by‑Step: Broad Bean Cold Storage Method

1. Harvest at the Right Time
